Mango Pudding
It's mango season, so we are featuring this refreshing dessert.
The fragrant sweet mango comes in many varieties in Asia. It is
very popular in entrees, soups and, of course, dessert. It is often
combined in recipes with fresh, creamy coconut as we have done here
in our mango pudding. You'll spot this dessert on the carts of Chinatown
Dim Sum restaurants.
Oriental Wok's Mango Pudding recipe:
2-3 medium sized mangoes
1 1/2 cups water
1 1/2 package gelatin (1 Tbn)
1/2 - 3/4 cups sugar, depending on the sweetness of the mangoes
1 cup coconut milk
Sprinkle gelatin in 1/2 cup warm water to soften. Skin, seed and
dice the mangoes. Process enough mango to collect about 2 cups of
puree. Reserve the remaining diced mango. Blend the puree with 1
cup water. Place coconut milk, sugar, and softened gelatin into
a small saucepan and heat (do not boil) to completely dissolve gelatin
and sugar. Blend mango into warm coconut mixture. Pour into 6 custard
cups & refrigerate until firm, about 6 hours. Top with diced
mango and serve.
